I was once lucky enough to be the upstairs neighbour of the very talented Rosie Mansfield; Good Chef, Nutritionist and all-round stunner of a chick. She taught me this recipe and, no jokes, I swear I make it once a week.
- 3 Tablespoons Rice Malt Syrup
- 3 Tablespoons Almond Butter (or other non-refined, no-added-sugar/ fat/ nasties nut butter)
- 1 Cup Puffed Rice
- 1/4 Cup Raisins or Cranberries
- A grind or 2 Himalayan Pink Salts
Mix the wet ingredients & salt together (heat/ microwave for 10-15 seconds if it’s winter and the nut butter has set), add the Puffed Rice and Raisins. Stir. Shape into 9-12 balls, depending on how big you like yours. Tadaaa! You’re done.
