Get Gorgeously Glowing Skin with this Delicious Brekkie Treat.
Makes 2 Servings (4x small pancakes)
- 3 Large Free-Range Eggs
- 1/2 Ripe Banana (slightly brown ones are best)
- 1/4 teaspoon Coconut Oil
- To Serve: A handful of cubed Watermelon, Shredded Coconut, Strawberries, Blueberries… whatever takes your fancy!
- To Drizzle: 1/2 teaspoon Rice Malt Syrup and/or 1-2 tablespoons Coconut Milk
Mash 1/2 of a ripe Banana into a bowl before cracking in 3 Free-Range Eggs and whisking up with a fork.
Heat some Coconut Oil in a small non-stick frying pan and pour in 1/4 of your mixture. Swirl the mixture in the pan to ensure an even coating (you will probably notice some lumps of banana – yum!) and heat until the pancake is easily detached from the base of the pan (30 seconds should do it).
FLIP IT! and cook the second side for a few seconds before sliding the pancake onto a plate.
Repeat the above for the 3 other pancakes.
Serve your pancakes with whatever fruits you like and accessorise with your brand new Oscar Wylee pink framed glasses 🙂
